This product is a steam rack oven that successfully bakes genoise, pies and other doughs that until now have only been baked in fixed ovens.
It combines the moist, soft and enveloping baking of a fixed oven with the rapid baking speed of a rack.
It also eliminates the need to work late into the night, as work can be done in rapid succession without waiting for the kiln, This is a major change to the patisserie work system.
